Christmas Memories 2015

This season has been one of our busiest if that is possible.  Abby performed as Aunt Tilly in Encore's production of "It's a Wonderful Life".  Allison danced in "The Nutcracker:  Land of Enchantment" with Festival Ballet.  Allison finished her culinary arts baking classes and Abby finished the first semester of her senior year--both while rehearsing for their shows.  

Allison's gingerbread tree was my favorite thing that she brought home from her baking class.  Beautiful!  And tasty.


A little fondant work...


Abby is madly working to finish her Christmas truffles that she has become famous for making.  These are mint Oreo truffles.

Chloe got to make crafts at a homeschool craft day we participated in.  This day was right up her alley.

Snow and more snow.  Although this picture was taken about a week or two ago, the forecast is calling for more snow in ABQ.  Albuquerque may enjoy a white Christmas!  But if not, Kyle has a chance for a white birthday the following day.  ;)

We made lots and lots of cookies this year and Abby attended a friend's cookie swap to add to our stash.  I only captured a picture of these peanut blossoms, but they are special because Chloe made them all by herself with only a little help from Grant who took them in and out of the oven for her.  These cookies are the best!

Peanut Blossoms
1/2 cup shortening
3/4 cup peanut butter
1/3 cup sugar
1/3 cup brown sugar
1 egg
2 T. milk
1 t. vanilla extract
1 1/2 c. flour
1 t. baking soda
1/2 t. salt
Additional sugar for rolling

Preheat the oven to 375 degrees.  In a large bowl, beat shortening and peanut butter until well blended.  Add sugars and beat until fluffy.  Add egg, milk, and vanilla and beat well.  Mix together dry ingredients and gradually add to peanut butter mixture until well blended.  Roll into one inch balls and roll in granulated sugar.  Place on cookie sheet and bake 8 to 10 minutes or until lightly browned.  Immediately place an unwrapped candy kiss in the center pressing down slightly.  Remove cookies to cooling rack.  Makes about 4 dozen.
