Chili-Lime Chicken Kabobs


We love to eat grilled food in the summer.  Over the years, we discovered a few favorite marinades for chicken and grew content with them.  This year, Kyle wanted something different--something zesty and something with heat.  So, he searched the internet and found a winner.  We can't get enough of this one!  If our kids were a little younger, we would cut the cayenne pepper in half, but they are finally old enough to take the heat.  Kyle would double the cayenne, but the rest of us couldn't take it!    So here's the recipe as we like it:


Chili-Lime Chicken Kabobs
6 T. olive oil
1 1/2 T red wine vinegar
4 T. lime juice
2 t. chili powder
1 t. paprika
1 t. onion powder
1 t. garlic powder
1/2 t. cayenne pepper
1 t. salt
1/2 t. pepper

Marinate chicken for 4 to 5 hours.  Marinate sausage and veggies of your choice for 1 hour.  Alternately thread chicken, sausage, and veggies on skewers and grill.
