Pesto Pizza

I've been avoiding tomatoes lately due to some sort of intolerance that I've developed for them. I can deal with no chocolate and no strawberries, but no tomatoes?! It's been really hard. I LOVE Italian food! I figured out a way to make pizza that I can eat, so I thought I would share my recipe because it is SO tasty!

Add any toppings you like, but my favorites for this pizza are pepperoni, bell peppers, and black olives.

Delicious! Here's my recipe:

Pizza Crust:
Dissolve 1 T. yeast and 1 t. sugar in 1/4 cup warm water. Let it sit for 5 minutes or until foamy. Add 2 cups flour, 1 T. olive oil, 1/2 t. salt, and 1/2 t. garlic powder. Mix together adding another 1/2 cup water until a dough hook cleans the sides of the bowl (or knead until elastic). Place the dough ball on a greased baking sheet turning once to coat, and cover with a towel. Let it sit for 10 minutes. Meanwhile preheat the oven to 425 degrees, and gather all your toppings. After 10 minutes, roll out the dough in a circle of about 12 to 14 inches and add toppings. Makes 1 pizza.

My favorite toppings:
Pesto sauce
parmesan cheese (sprinkled on top of the sauce)
pepperoni
bell peppers
black olives
onions
hamburger
2 cups of mozzarella and cheddar cheese (sprinkled on top)

Bake pizza at 425 for 15 to 16 minutes or until the crust is brown and cheese is bubbly.

** I double the pizza crust recipe for my family and make one 12 to 14 inch pizza and two smaller ones--the kids don't like veggies on their pizza, and they prefer tomato sauce. :)

Yum! I order a veggie burger at Cafe Express and they serve a little thing of romesco sauce with it. I think romesco sauce is made from almonds and red pepper. It is delicious and it is red so it makes you think you are eating tomato. I'll search for a recipe and get back with you!
