Pizza, Salad, and All the Accessories

Tonight, we enjoyed a simple dinner of pizza pockets and salad. A new twist on an old favorite best describes the pizza pockets that we devoured tonight.

Chloe made our typical salad a little more special tonight by calling it "salad and all the accessories". We did have a lot of condiments to go on our salad tonight!

These tasty little pockets made a nice change from our usual pizza dinner.

Pizza Pockets

1 Pizza crust recipe. (I doubled the recipe for our family of 6.)
Instead of rolling out the dough into two pizza crusts, simply make little balls of dough and roll them out into circles about 5 inches in diameter. Spread sauce and sprinkle favorite toppings on one end of the circle. Then fold the dough in half over the toppings. Press the edges with a fork to seal. Brush outside crust with a little olive oil or pesto sauce. Bake on a greased pizza pan or cookie sheet at 425 degrees for 16 to 18 minutes or until crust is browned.

These would probably freeze very well and be a quick dinner or lunch option. Next time, I may try to make twice the amount we normally eat and freeze the left overs for an easy busy night dinner. If you try it, let me know how it turns out.
