
Our family loves to eat pancakes. Well, to be fair, one prefers waffles, and one claims breakfast isn't necessary, but the rest of us love pancakes. One of the kids' favorite books when they were little was Eric Carle's book---Pancakes, Pancakes!
Reading about pancakes (Chloe still checks this gem out of the library on occasion.) makes me want to EAT pancakes. And we do. Most Saturday mornings are pancakes mornings. Or waffle mornings. This recipe is my favorite one with a twist or two or three, depending on my mood.
Banana Chocolate Chip Pancakes (Twist 1)
In a large mixing bowl, stir together 2 eggs, 2 ripe mashed bananas, and 2 T. oil. Add in 2 cups whole wheat flour, 3 T. sugar, 5 t. baking powder, 1 t. salt, and 2 cups milk. Whisk all ingredients together until well combined. Cook on preheated griddle. I add mini-chocolate chips to the kids' pancakes after I pour the batter on the griddle and pecans or walnuts for Kyle and I--just plop a few on top of each pancake.
Peanut Butter Pancakes (Twist 2)
These are my favorite variation because not only do they taste so yummy when they are fresh, but the peanut butter pancakes heat up wonderfully the next day if there are any left over!
In a large mixing bowl stir together 2 eggs, 5 T. melted butter, and 1/2 cup peanut butter. Add. 2 cups whole wheat flour, 3 T. sugar, 4 t. baking powder, 1 t. salt, and 2 cups milk (add a little more milk if your batter is too thin). Whisk together all ingredients and bake on preheated griddle. Add mini-chocolate chips to these too if desired.
