I've had several people ask me about the pancake recipe that I use, so I thought I would post the recipe here. I do use fresh ground whole wheat, and I think that makes a huge difference in the outcome of this recipe. I made banana pancakes yesterday by adding 2 or 3 ripe bananas that I put through the blender first. I added chocolate chips to half the batter and Stahmann Farm's pecans to the other half. The kids haven't learned how good the pecans are yet...Whole Wheat Pancakes
2 eggs
1/3 cup oil (you can reduce or eliminate the oil if using pureed bananas)
2 cups of flour
2 cups milk
5 t. baking powder
1 t. salt
3 to 4 T. sugar
Whisk together all ingredients and cook on preheated griddle.
* Since we live in high altitude, I add 1 heaping T. of flour and sometimes drop the baking powder to 4 t. instead of 5.

Well I can say those pancakes are quite delicious because I enjoy them every time we visit. However, Hodgeson Mill makes a great whole wheat pancake mix as does Aunt Jemimah. I use buttermilk when I make mine. No way I'm gonna grind my own wheat. Those pecans sound yummy. I don't think we get Stahmann Farm's pecans here in the southeast Houston area. Maybe I can pick some up when we visit ABQ in a few days.
