Mini- Cupcakes...From Scratch!

I am a baking snob. I do not like to buy desserts or make them from boxed mixes. To do so feels like cheating. However, since moving to high altitude country, I've had to adjust my thinking where cakes and brownies are concerned. Sunken in cakes ruin the joy of baking for me, so cake mixes with their high altitude directions have been a must. However, Chloe's mini- cupcake kit contains a recipe for mini cupcakes that bake up beautifully with nice rounded tops even in Albuquerque. Because this recipe uses very little sugar, the frosting doesn't make them too sweet to eat. If you have a lot of cupcake eaters in your house like we do, you better double or triple the recipe. The decorating compliments go to Allison, Abby, and Chloe. Nice job girls!

Vanilla Mini-Cupcakes

3/4 cup flour
3/4 t. baking powder
1/8 t. salt
2 T. sugar
3 T. butter, softened
1 large egg
1 t. vanilla
1/4 cup milk

Combine liquid ingredients then add dry ingredients and mix well.
Spoon batter into mini muffin cups filling 3/4 full.
Bake at 325 degrees for 10 - 12 minutes.
Remove cupcakes from pan and let cool completely.
Frost and decorate.
Yields: 18 mini cupcakes
