Peach Cobbler

This week our family is enjoying a visit from my mom and dad. Mom makes the best peach cobbler and treated us with some yesterday. Chloe decided to watch and learn while the rest of the kids feasted on yummy fresh peaches before they went into the cobbler.




Mom's Tried and True Pie Crust
1/3 cup shortening
1 cup flour
1/2 tsp. salt
2-3 T. cold water

Put shortening in mixing bowl and cut in the flour, salt, and cold water with pastry blender or fork until well blended. Roll out dough. Makes 1 pie crust.

For peach cobbler, there is no recipe. Mom just cuts up lots of fresh peaches and adds butter, sugar, and cinnamon to the mixture. She also cuts up pieces of crust dough and mixes that into the peach mixture, and lays the rest of the crust on top. She baked this one in a 9X13 pan at 350 degrees for about 40 minutes or until the crust browned and the cobbler was bubbly. She claims her cobbler not pretty, but who cares? It's the best I've ever eaten!

Sorry we didn't do one when we stayed with the boys, Leigh Ann. Do they like peach cobbler? I didn't know if they would like anything other than Chocolate!
