
We sure enjoyed our visit with Gigi and Poppa last week. They've gone back to Texas now, but Gigi left us with a great recipe for a quick lunch---potato soup! This will be a great recipe to pull out on those cold New Mexico winter school days.
Quick Potato Soup
Instant mashed potatoes
water
butter
salt
milk
cheese, bacon, chives, pepper (optional)
To make this easy soup, simply follow the directions on the side of the box for making instant mashed potatoes. The girls and I love potatoes, so to make this for the four of us, I use the directions for six servings. Make the potatoes, and then thin them with more milk until the soup is the consistency that you like. I probably added around two cups of extra milk for us. Ladle the soup into bowls and immediately stir in shredded cheese and add the toppings of your choice.
